Raw Granola (aka Rawnola!)

It's Spring! Finally!! Or, should I say... Already!! Because 2020 is flying by! Either way, I'm pretty done with winter and I'm so looking forward to warmer weather! Warm weather brings with it more raw foods such as salads, fruits, juices, smoothies... All the refreshing and hydrating foods that we love to eat when the sun is shining.


Here is a simple raw granola recipe that can be whipped up in no time. Perfect for warm days when you don't want to put the oven on. I've used sunflower seeds and Brazil nuts to add some healthy oils and a little protein as well as cinnamon and ginger to warm up the meal a little as they both have warming effects on the body.


 

RECIPE


Ingredients

- 3 cups oats (use GF if required)

- 1 cup coconut flakes

- 1/2 cup sunflower seeds

- 1/2 cup Brazil nuts

- 1 tsp cinnamon

- 1 tsp ground ginger

- around 20 dates

(This makes quite a big batch so it'll last a while.)


Method

- Take the seeds out of the dates & add to a high speed blender or food processor with all other ingredients

- Blitz.

- Because the dates are so sticky the mix might clump together. In this case you might need to take some out & blend a little bit at a time. It will depend on the machine you're using. I used my Vitamix but still needed to do this a few times because I prefer the granola to be crumbly rather than in clumps. You can use a little less oats if you prefer it to be more clumpy as well.

- Keep in a container in the fridge. Eat with smoothie bowls, fruit bowls, yoghurt, milk... All of the ways you'd usually eat granola!
