Lemon & Blueberry Muffins.

We have soooo many lemons! I give them away as often as I can and use as many as I can too but still...we have loads! I really had no other choice than to make lemon & blueberry muffins again!

Of course these are quick and simple because I can not be bothered with difficult cooking! I even put this batter together in one bowl. Because who can be bothered washing up 2 bowls!




- 1 cup of rye flour

- 1/2 cup plain flour

- 1/3 cup coconut sugar

- 2 tbsp flax meal

- 2 tsp baking powder

- 3/4 cup soy milk

- 1/4 cup extra virgin olive oil

- zest & juice of a small lemon

- 1/2 cup frozen blueberries


- Preheat the oven to 175° C

- Add all ingredients except the blueberries to a large bowl - just add the lemon zest & juice last

- Mix until just combined

- Fold through the blueberries

- Spoon into a lined or greased muffin tray

- Bake for 20-25 minutes or until cooked through
