Banana Oat Pancakes.

If you're getting tired of banana bread (if that's possible!), here's another great way to use up ripe bananas. This is a totally delicious and fun weekend/holiday breakfast too!



 

RECIPE


Ingredients

- 1 cup oat flour (ground up oats)

- 1 tsp baking powder

- 1 tsp cinnamon

- 1 mashed ripe banana

- 2 eggs

- 1/4-1/2 cup milk of choice (amount depends on the size of your banana & eggs)


Method

- Lightly beat the eggs then mix with the banana & milk

- Mix through the remaining ingredients to create a batter

- Heat a fry pan with a little olive oil, coconut oil or butter then spoon in a small amounts of batter. Add in as many will fit into your fry pan

- Flip to cook on the other side when little bubbles form

- Transfer to a plate & repeat until all of the batter is cooked

- We love ours with yoghurt, berries & lemon thyme
