Lemon & Garlic Cashew Salad Dressing.

Prep this on the weekend & you’re halfway to having delicious salads through the week!

This goes perfectly as a dressing for a slaw, caesar salads or any salad made with whatever you have in your fridge. Throw in some leafy greens, roast sweet potato, tinned beans, tomato, cucumber, capsicum & avo…then drizzle this salad over. Yum!




- 1/2 cup cashews

- 1/3 cup water

- the juice of a small lemon

- 1 tbsp extra virgin olive oil

- 1 tbsp hemp seeds

- 1 tbsp nutritional yeast

- 2 tsp Dijon mustard

- Salt & pepper


- If you have a high speed blender, add everything in then blitz until smooth. Scrape down the sides a couple of times if needed

- If you don’t have a high speed blender, soak the cashews overnight first then rinse & drain them before adding to a food processor with the other ingredients & blitz until smooth

- Taste & adjust with salt & pepper as needed

- Transfer to a glass jar & keep in the fridge & use as needed.
