Don't tell me, I had you at halloumi... Right??
This is my favourite yoghurt dough recipe. I use it all the time! I've posted it before when I made gozleme & I'll probably post it again in the future because everyone needs to know about it! It's so quick & easy to make but it's also so light, fluffy & yum!
300g wholemeal self raising flour
300g Greek, plain or coconut yoghurt
a good pinch of salt
Around 100g of halloumi (use vegan if preferred)
Preheat your oven to 175° C
In a bowl, mix the yogurt & flour together until you need to use your hands
Turn it onto a floured bench & knead with your hands until it comes together
Slice into 4 equal parts
Roll each one out to around 1cm thickness
Place on a lined baking tray
Crumble over the halloumi evenly over each piece
Bake for around 20 minutes or until it begins to turn golden
Slice & enjoy! We had ours with pumpkin soup.
