Green Super Salad.

This is the perfect addition to any bbq, gathering or picnic. It's also great for meal prepping lunches for the week. It’s really easy to make, it’s loaded with nutrition and it tastes so good!


Kale is the Queen of all vegetables because it’s so high in so many vitamins, minerals and antioxidant. Whilst I absolutely love it, it’s not a favourite of everyone. In this salad, even kale-haters will do a u-turn to become kale lovers too!



 

RECIPE


Ingredients

- 1 cup dry quinoa

- 1 cup frozen peas

- 1 small bunch of kale chopped finely

- 1/2 cup pepitas

- 1/2 cup sunflower seeds

- 1 tbsp extra virgin olive oil

- 2 tbsp red wine vinegar

- 1 tsp Dijon mustard

- 2 tsp maple syrup


Method

- First up, cook the quinoa... Place the dry quinoa in a medium saucepan with 2 cups of vegetable stock, bring to a mild boil then simmer on low for 10-15 minutes or until the water has absorbed

- Add the frozen peas to the quinoa & put the lid on. The heat from the quinoa will defrost the peas

- Next finely chop the kale finely

- Add the quinoa, peas & kale to a large mixing bowl with the pepitas & sunflower seeds

- In a small jar add the oil, vinegar, mustard & maple syrup then shake to combine

- Pour the dressing over the salad & gently mix through

- Thats it!
