Tuna & Rice Salad.

The perfect summer lunch that takes no time to make. I usually cheat & use a packet rice because I’m not usually organised enough to cook rice first.. If you are then do that!

You could make this to take to a bbq or meal prep for 2-3 days lunches. I make this for my girls’ school lunches too & they love it!

There’s the perfect mix of protein, healthy fats, carbs, fibre & loads of nutrition. Plus...it's delicious!



- 250g packet of precooked brown rice (or cook 1/2 cup brown basmati rice in 1 cup water on very low until cooked)

- 185g tinned tuna

- 1 tin beans of choice (I usually use butter beans)

- 1 Lebanese cucumber

- 1/2 red capsicum

- a good handful of fresh herbs such as parsley or basil

- Extra virgin olive oil

- 1/2 lemon
