Mangomisu

Mango + tiramisu = mangomisu!


I first made this about 5 years ago & I feel like I might’ve invented it! Maybe? Maybe not? Either way…this is an amazing recipe!


This is a little fiddly to put together but there is no cooking which keeps it relatively easy. It's worth the effort and depending on how many people you're serving...the leftovers are great for breakfast. Especially on Boxing Day if you're having this on Christmas Day!



Using fruit in place of coffee & liqueur makes it kid friendly but if you don’t need to worry about that, you can add in Prosecco or limoncello to the dipping liquid in place of coconut water.



RECIPE


Creamy layer...

- 500g smooth ricotta

- 250g cream cheese or a thick Greek yoghurt

- 1/3 cup sugar

- zest & juice of 1 lemon


Dipping liquid...

- 1 mango

- 1/2 cup coconut water (or Prosecco/limoncello)

- juice of 1 lemon


And you’ll also need...

- 1 large packet of sponge finger biscuits

- 2-3 more mangoes

- a small bunch of mint
